2 Organic Prairie® New York Strip Steaks
- 8 ounces Brussels sprouts
- 3 red potatoes
- Half red onion
- 2 tablespoons extra virgin olive oil
- Lemon rosemary sea salt (or your favorite seasoning blend)
- Salt and pepper
Directions
- Preheat the oven to 400°F. Line a baking sheet with parchment paper.
- Allow the steaks to come to room temperature and pat dry.
- Trim and half the Brussels sprouts. Chop the potatoes into 1-inch cubes. Roughly chop the onion. Place on the baking sheet.
- Drizzle with olive oil and sprinkle with seasoning mix to coat completely. Bake for 30 to 40 minutes, or until the potatoes are tender when poked with a fork and Brussels are golden brown.
- Salt and pepper the steaks on each side well.
- Put a cast iron skillet over high heat, lightly drizzle with a bit of olive oil. Your pan is ready when you drop a dollop of water onto it and it sizzles.
- Place the steaks in the cast iron skillet and sear for 2 minutes on the first side, 1 minute on the second side.
- Transfer the skillet to the oven to finish cooking for about 5 to 7 minutes (depending on thickness of steaks) or until the internal temperature is 125°F (for medium rare) or until your liking. Allow steaks to rest for at least 3 to 5 minutes before cutting.
