Ingredients

1 package Organic Valley® Pork Bacon
- 2 pounds organic Red potatoes

4 tablespoons (57 grams) Organic Valley® Salted Butter

1/2 cup Organic Valley® Whole Milk
- Salt and pepper to taste
Directions
- Cook the bacon to your liking. You can do this in a cast iron skillet, air fryer, toaster oven, or oven. Once cooked, chop into small bits and set aside.
- Fill a 5-quart stock pot three-quarters full with water.
- Chop potatoes into halves or quarters, so they are all about the same size. Add the potatoes to the pot.
- Bring the potatoes to a boil and boil for about 15 to 20 minutes, or until the potatoes are soft when poked with a fork. Strain the water.
- Add the butter to the hot potatoes. Mash the potatoes and butter together using a potato masher. Add in half the milk and mash together, then add in the remaining milk and mash together. Add salt and pepper to taste.
- Stir in the bacon bits and serve immediately.
Recipe Note
I like to leave skins on the potatoes, but if you want to peel them, you can do that as well!
