Preheat the oven to 350°F. Line a baking sheet with
parchment paper.
In a large mixing bowl, add the ground beef, salt, pepper,
breadcrumbs, onion, and egg. Mix together until the mixture is uniform.
Using a tablespoon, measure the meatballs and then roll into
balls using your hands. Place them on the prepared baking sheet.
Bake for 30 to 35 minutes, or until the meatballs are brown
and have an internal temperature of 160°F. Turn the oven to broil, and broil
for an additional 3 to 4 minutes, until golden-brown. Remove from the oven.
While the meatballs are baking, cut the cheese slices into squares.
You’ll get about 6 small triangles per slice.
As soon as the meatballs are done, remove from the oven, add
the cheese and place back in the oven for 2 to 3 minutes or until the cheese is
melted.
Add a pickle slice, grape tomato, piece of lettuce, and the
meatball onto a toothpick and they are ready to serve.
Serve immediately with ketchup and
mustard for dipping.
