1/2 cup extra virgin olive oil

1/4 cup coconut milk
- 2 teaspoons spicy brown mustard

2 teaspoons apple cider vinegar
- 1/2 teaspoon fine sea salt

1 cup kale

1/2 cup spinach, chopped

1/2 cup chopped cabbage

1/4 red pepper, diced

2 slices red onion, diced

2 slices leftover Turkey, diced

1/2 avocado, diced

Directions
- To make the dressing: In a medium bowl, add the olive oil, coconut milk, mustard, apple cider vinegar, and sea salt. Whisk together.
- To make the salad: In a large bowl, add the kale, spinach, cabbage, red pepper, red onion, turkey, and avocado.
- Drizzle dressing over the top of the salad.
