Cook the bacon to your liking. You can
do this in a cast iron skillet over the stovetop, in your toaster oven, air fryer
or regular oven.
Cut the potatoes into ¼-inch thick
stripes. Place them in a large bowl with cold water and let them soak for 10 to
20 minutes. The water will turn murky, this will help remove some of the starch
and give you crispy fries.
Preheat the oven to 400°F. Line a
baking sheet with parchment paper.
Drain the potatoes from the water and
add the avocado oil and BBQ seasoning and coat the potatoes completely. Spread
them out evenly onto the baking sheet.
Bake for 20 minutes, then stir the
fries and bake for another 10 to 20 minutes until golden brown.
Once the fries are done, remove them
from the oven and add the grated cheese on top. Return to the oven and bake for
another 3 to 5 minutes, until the cheese is melted.
Chop the bacon into small bits and add
on top of the melted cheese.
Top with chopped parsley and a drizzle
of ranch dressing.
