Ingredients

4 large carrots

4 celery stalks

1 yellow onion

1 1/2 pounds baby gold potatoes

2 cups beef broth

1 can (15 ounces) butternut squash purée

1 tablespoon minced garlic
- 2 teaspoons fine sea salt

1 teaspoon black pepper

1 teaspoons dried thyme

1 teaspoon dried oregano

1 teaspoon dried sage

1 package Organic Prairie® Stew Meat
-
2 bay leaves
-
1 package Organic Prairie® Pork Bratwurst

1 package Organic Prairie® Pork Bacon
Directions
- Slice the carrots, celery and onion. Set aside. Chop the baby gold potatoes in half or quarters, depending on size. Make sure they are all about equal sizes.
- Add the beef broth, butternut squash purée, garlic, salt, pepper, thyme, oregano, and sage to a slow cooker. Stir to combine completely.
- Add the stew meat, carrots, celery, onion, potatoes, and bay leaves and stir to combine and coat everything.
Slow cook on low for 2 to 3 hours or until potatoes are tender, stir every 30 to 60 minutes. Alternatively, if you do not have a slow cooker, you can do this in a large Dutch oven or pot on the stovetop. Be sure to cover and leave on a low simmer.
- When the stew is done, slice the bratwurst and add to the stew. These will steam and warm as long as the lid is on.
- Cook the bacon in an oven or in a skillet, making sure to get it crispy. Chop bacon into small bites, the crispier the better, for a stew topping.
- Serve stew with bacon bites on top. Add red chili flakes for some extra heat (optional)!
