This easy recipe for Pork and Sweet Peppers Lettuce Cups is a delicious appetizer for any dinner party. Or if you are a family of two, it can make an amazing quick and satisfying weeknight dinner. For a little extra heat, add 1 teaspoon of organic red pepper flakes to the pork.
Ingredients
-
1 pound Organic Prairie® Ground Pork
-
1 teaspoon Chinese five spice
-
1 teaspoon fine sea salt
-
3/4 teaspoon black pepper
-
1/2 teaspoon garlic powder
-
1/2 teaspoon marjoram
-
2 tablespoons Organic Valley® Ghee
-
1 cup diced yellow onion
-
1 cup sliced mini sweet bell peppers (about 8 peppers)
-
1 head butter lettuce
-
2 scallions, sliced
Directions
In a large bowl, season the pork with the five-spice, salt, pepper, garlic powder, and marjoram. Mix with your hands to combine completely. Set aside.
In a large skillet, add the ghee, yellow onion, and peppers. Saute over medium/high heat, for 1 to 2 minutes.
Add the ground pork. Continue to cook on medium until the pork is browned, and fully cooked, about 10 minutes. Turn heat to high and brown for another 3 to 5 minutes.
To serve, place lettuce cups on a serving board. Add the pork into lettuce cups and top with scallions.
