Salsa Verde Burger Bowl
This simple Whole30 recipe is made using a mix of ground pork and ground chicken with classic taco seasoning. This filling but light burger is topped with grilled onions, avocado, cilantro, and salsa verde for a burger full of greens that you can feel good about eating! If you’re not following Whole30, the addition of Organic Valley Sour Cream and tortilla chips take this to the next level.

Ingredients

1/2-pound Organic Prairie® Ground Pork

1/2-pound Organic Prairie® Ground Chicken

1 1/2 tablespoons taco seasoning

1 yellow onion
-
2 tablespoons Organic Valley® Ghee
- Fine sea salt

2 Romaine lettuce hearts
-
2 avocados
-
1 lime
-
1/4 cup chopped cilantro

Green salsa, for serving
Directions
- In a large bowl add the ground pork, ground chicken, and taco seasoning. Mix the meat together completely to incorporate the spice mix and so the meat is evenly mixed. Place the bowl in the fridge, until ready to form burgers.
- Thinly slice the onion and add to a large skillet with the ghee. Put over medium/high heat and cook until onions are slightly browned and translucent, about 5 minutes. Remove from heat, and lightly salt the onions to our liking. Set aside.
- Chop lettuce into thin slices and place in bowls. Slice avocado and cut limes into wedges. Set aside.
- Remove the meat from the fridge and form the burgers four 4-ounce patties that are about 5-inches in diameter.
Heat grill to high, place the burgers on the grill and cook, flipping half way though, until internal temperature of 165°F. Depending on what kind of grill you have, it may take longer, propane, gas, open grill – there is a lot of variables here so make sure you don’t leave burgers unattended. (Or alternatively, you can cook burgers in a large skillet over medium/high heat, add the burgers. Cook for 3 to 4 minutes per side, until internal temperature is 165°F).
- Place the burgers on top of the lettuce, add grilled onions, avocado, and cilantro on top. Serve with salsa verde and a wedge of lime.
