Ingredients

4 large celery stalks

3 large carrots
-
2 large russet potatoes

1 large yellow onion

1 Organic Prairie® Whole Turkey carcass

4 cups vegetable stock (or chicken stock)
- Salt and pepper to taste
Directions
- Dice the celery stalks. Slice the carrots diagonally into 1/2-inch thick slices. Slice the onion into 1 to 2-inch pieces. Add these veggies to a bowl and set aside.
- Cut the potatoes into 1 to 2-inch cubes, add into a separate bowl and set aside.
- Add the turkey carcass and vegetable broth to a slow cooker. Cook on high for 2 hours or until the meat easily falls off the bones.
- Remove the carcass, bones, and skin from the slow cooker. Pull the turkey meat off and add back into the slow cooker.
- Add potatoes cook for 30 minutes.
- Add the carrots, celery, and onion and continue to cook for 1 hour or until the potatoes and veggies are done. Add salt and pepper to taste.
