1.5 pounds Baby Gold potatoes

1 teaspoon black pepper

1 teaspoon red pepper flakes

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

2 packages of Organic Valley® Bacon

Fresh chives, chopped

sour cream, ketchup, or barbecue sauce for serving
Directions
- Preheat the oven to 400°F. Line a baking sheet with parchment paper.
Fill a 4-quart pot three quarters with water and add a little salt to the water.
- Add the potatoes (skin on) and bring to a boil. Boil for about 10 minutes until the potatoes are partially cooked. You want the potatoes to be partially cooked because they will cook more in the oven in the next step.
- Drain the potatoes and run under cool water.
- In a small dish, add the black pepper, red pepper flakes, garlic powder, and onion powder and mix together. Set aside.
- Chop the potatoes in half or in quarters, depending on how bit they are.
- Cut the bacon slices in half.
- Wrap the potatoes in the bacon slices and secure them with a toothpick. Place on the prepared baking sheet. Sprinkle the potatoes with the spice mix.
- Bake for 15 minutes, rotate potatoes, if needed. And bake again for another 15 minutes or until the bacon is crispy and golden brown.
- Sprinkle with fresh chives and serve with sour cream, ketchup, or barbecue sauce.
