Liver is a superfood, that has significant amounts of iron, vitamin A, copper, and more! But, liver is also a cleansing organ, so when choosing organic meats to enjoy, organic is incredibly important! This easy recipe for Beef Liver Pâté adds loads of nutrients to a classic charcuterie board.
Ingredients

1/2 pound Organic Prairie® Beef Liver

1/2 cup diced yellow onion

1/2 cup diced green pepper

1/2 cup sliced mushrooms

4 tablespoons Organic Valley® Salted Butter, softened

1 teaspoon minced garlic
-
1/2 teaspoon dried thyme
- 1/2 teaspoon fine sea salt

1/2 teaspoon black pepper
Directions
- Fill a 2-quart pot three quarters with water. Add the beef liver and boil. Once boiling, reduce heat to medium, cover and cook until the liver is light pink inside, about 5 minutes. Remove from pot and allow to cool.
- In a skillet over medium heat, add 1 tablespoon of butter and the garlic, diced onions, and green pepper. Sauté until the onions are translucent and fragrant and the onions and mushrooms are cooked, about 5 minutes. Remove from the heat.
- Cut the beef live into small chunks.
- Add the befe liver, veggies, remaining 3 tablespoons of butter, thyme, salt, and pepper to a food processor and process until you have a smooth paste.
- Transfer the liver to an airtight container and refrigerate overnight.
- Enjoy on crackers or toast.
