1 Organic Prairie® Chuck Roast
- 2 tablespoons granulated garlic
- 1 tablespoon onion powder

3 tablespoon fresh ground black pepper

1 tablespoon kosher salt

1 teaspoon cayenne powder
- 1⁄2 head cabbage, green or purple or both, finely shredded
- 1 1⁄2 cups cilantro, coarsely chopped
- 1⁄2 red onion, thinly sliced
- 1 jalapeno, chopped/diced

1⁄2 cup extra virgin avocado or olive oil

1 lime, juiced

Pinch of cracked black pepper, or more to taste
- Pinch of sea salt, or more to taste
- 1⁄4 cup olive oil

2 large Russet potatoes cut into matchsticks
- Salt and pepper to taste

Directions
FOR THE SMOKED CHUCK ROAST
Preheat smoker to 250°F. Combine granulated garlic, onion powder, black pepper, salt and cayenne powder in a small bowl. Place the Organic Prairie Chuck Roll Roast on a tray or cutting board and rub seasoning on all sides. Set in smoker on middle rack and cook for 2 hours. Do not open grill during this time. After 2 hours check chuck roast temperature with a meat thermometer. When meat reaches 150°F, wrap in foil and increase grill temperature to 275°F. Continue cooking until meat temperature is between 195°F and 205°F or no longer climbs in temperature. Reduce grill temperature to 170°F and rest meat 1 hour inside of the smoker. Slice and serve with sides.
For the Coleslaw
Add cabbage to a large bowl. Dress with remaining ingredients and toss well until all the cabbage is evenly dressed. Taste and adjust seasonings to suit your liking. Let rest while preparing the rest of your meal.
For the Oven Roasted Fries
Preheat oven to 425°F. Coat baking sheet with olive oil, and place potatoes on sheet in a single layer. Bake in oven, turning with spatula two or three times until crisp and golden brown. Remove from oven and let cool 3 minutes. Season with salt and pepper.
