1/2 cup chopped green beans

2 tablespoons diced carrots

2 tablespoons diced celery

2 tablespoons diced yellow onion
- 1 large Russet potato (or sweet potato)

3 tablespoons Organic Valley® Ghee
- 1/2 teaspoon fine sea salt

1/4 teaspoon black pepper

1 Organic Prairie® Boneless Skinless Turkey Breast

Extra virgin olive oil

2 teaspoons poultry seasoning
- Fine sea salt

Directions
- Preheat the oven to 325°F.
- Chop the potato in about 1-inch wide slices. You can leave skin on or peel off, totally up to you! Add the potatoes into a 2-quart pot filled three-quarters with water. Put over medium/high heat and boil potatoes until soft when poked with a fork, about 10 minutes.
- Strain the potatoes and add the ghee, 1/2 teaspoon sea salt and 1/4 teaspoon pepper, and mash to combine completely. Add the chopped carrots, celery, onion, and green beans and stir to combine completely. Set aside.
- Butterfly the turkey breast by using a sharp knife and cut horizontally into the thickest part of the breast, so you have one even piece.
- Drizzle with olive oil, sprinkle with salt and pepper and half the poultry seasoning. Add filling evenly, roll and tie with twine in 4 places, drizzle with olive oil and sprinkle with salt pepper and the remaining poultry seasoning.
- Place into a shallow baking dish and cover with foil. Bake for about 45 minutes covered.
- Remove the foil and increase temperature to 400°F and continue to bake for 15 to 20 minutes until golden brown and the internal temperature is 165°F.
